Islay……. a place of rich history, rugged landscape, rare wildlife, and a whisky heritage like no other. It’s a place of renowned friendliness, beautiful scenery, and over 3,000 years of compressed, waterlogged moss, vegetation and plants that have grown and died, creating the Peat banks of today. There is nowhere else on earth like it. A quest to find Scotland’s best whisky might bring you to the island, and as many of you find out, Islay is so much more and the very reason why you stay, immigrate, or become returning visitors for years to come. There are nine iconic distilleries here, with a few more distilleries planned and approved to include Port Ellen. Some of the most famous names in the whisky world are located here. All on an island of 3,000 people. Whisky is, of course, Islay’s ultimate claim to fame; it is a way of life on this windswept isle. That said, there is so much more to Islay’s charm than its golden drams: the landscape, the light, the coast, the cuisine, and the locals. Exploring old barley varieties used in making whiskey in Ireland

Waterford distillery in Ireland searches for natural flavours in whisky via three paths: Their Single Farm Origins: pursue the individualism of terroir-derived flavour; they are the building blocks of Waterford's Cuvées, where the whole is greater than the sum. Finally Their Arcadian Barley expresses the intensity of flavour from exploring the old ways – of Organic, Biodynamic, Heritage and even Irish-peated barley. Indeed, so thorough is their exploration of the frontiers of natural flavour that they are the world’s largest producer of organic and biodynamic whiskies. In this episode, we focus on Heritage varieties with Waterford distillery. You see, the modern varieties of barley available to distillers are all descendants of similar grandparents; they are siblings who share too much genetic material with each other. Each new family member has been bred for reasons of disease resistance, crop yield or spirit yield – but never flavour. So Waterford started exploring heritage varieties from the past, starting with a mere 25g of barley samples for each of the heritage varieties, which were stored by the Department of Agriculture in Backweston Co. Dublin. These 25g samples were then upscaled to 40 tonnes of barley for malting purposes, which means that the project has taken several years for the quantity of grain to be viable for distillation. How To Blend Lambic Beer?

How do you blend Lambic beer? Producers have a brewery full of barrels to select from, each with their own characteristic. They will sample from their barrels, select those to contribute to their Gueuze, dedicate others to fruit beers, and tag other barrels for continued aging. ➡️ Blending became popular because the spontaneous fermentation of the Lambic wort can have such unpredictable results. I was lucky to have Gert Christiaens from Oud Beersel explain how blenders uses their senses to determine which casks will blend best with others, and in which percentages, to create the final product. How Lambic Is Fermented with 3 Fonteinen. Spontaneous Fermentation Explained

What is Spontaneous Fermentation? It is what happens when a brewer, winemaker, or distiller leaves the inoculation (the moment when yeast and bacteria come in contact with the liquid) up to whatever organisms happen to be in the air or on the fruit that they are fermenting. It is an age-old practice, first by accident and then by intention, that truly puts Mother Nature at the helm of brewing magic. ➡️ It is no surprise that I was extremely interested in learning more about spontaneous fermentation of Iambic beers. I sought out a Iambic brewer and gueuzesteker (blender) who could teach me more about the sour styles from the Valley of the Senne and the Pajottenland in Belgium. This is, in fact, the birthplace of Lambic beers. I was fortunate enough to spend the day with Armand De Belder of the 3 Fonteinen brewery, located in Beersel, Belgium. Over the years, Armand’s beers have been highly rated all around the world thanks to his attention to detail, use of natural ingredients, and passion for the craft. Just to give some context to his team’s work ethic, Brouwerij 3 Fonteinen was named the best brewery in Belgium in 2015 by Ratebeer and the Third Best Brewery in the World. ➡️ When I first met Armand, I could sense the passion for Lambic that is in his blood. He drove me around the city of Beersel and showed me over 20 different gueuzesteker residences from the past. As we drove, he explained how the craft and the blenders of Lambic slowly vanished over time. We had lunch at the original 3 Fonteinen property that his father purchased in 1961, which is now the Restaurant 3 Fonteinen run by his brother, Guido. We discussed his familial relationships and his obsession with preserving a tradition shrouded in mystery. ➡️ What I sensed during our meeting that day was a man who worked extremely hard and gave everything he had to keep the tradition of making and blending Lambic from dying. He put his passion before himself, sacrificing his personal life to build 3 Fonteinen to the renowned brewery it is today. I could relate his journey to my military service; I understand the dedication required to make sacrifices for something you believe in. Selfless service to a higher calling can often lead to regret on some level, but as I saw first-hand the spoils of his dedication, it was apparent what his dreams and aspirations were. How Do You Brew Lambic Beer? How Lambic Is Made With Lindemans Brewery

How do you brew Lambic Beer? What is Lambic? The Lambic family of beers are not for everybody, they are wildly unpredictable, not knowing if they want to be a beer or wine. I remember drinking Lambic for the first time and I was in shock and surprised. Where is the malt? And the hops? Wow that was funky and complex, I do not even know how I would describe this! ➡️ I took another drink and found myself saying the same thing. You see, you will not find any other beer like it. The relationship between the drinker and this beer is usually one of passionate love or hate. The ensuing relationship I built with Lambic was one of passionate love. I wanted to try more of it, and I wanted to know more about this complex and unique beer. ➡️ So, who better to learn how Lambic is made then from a brewery that has been making Lambic Since 1822. Six generations of pioneers that have succeeded each other. They started off as farmer-brewers, then starting in the second half of the 1950s - as just brewers. Under the influence of these six generations of Lindeman’s, their brewery has become one of the leading producers of Lambic in the region and in the world. What is the Identity of the Valle de Guadalupe? What Varietals grow the best here? ➡️ The combination of cool nights and sunshine make Baja an ideal spot for more intense red varieties. There are so many different varietals ranging from Sauvignon Blanc to Cabernet Sauvignon, but there is a clear favorite among many winemakers and sommeliers: Nebbiolo. 🍇 Nebbiolo has adapted well in the Valle, but just a few years back they were saying the same thing about Tempranillo. What is exciting is that winemakers can be creative and come up with extremely exciting blends ➡️ The mix of international grapes is increasing, the oldest vines in the region are Carignan, Grenache and Mission. Some winemakers believe these varieties also hold the key to Mexico’s wine future as they are the best adapted to the environment. ➡️ The character of Mexican wines depends on the vineyard site. It has a huge mix of soils that have been brought to the surface by the action of the colliding tectonic plates in this highly active seismic area. The most remarkable feature are the ginormous boulders that are strewn around the valley. Baja California produces nearly 70% of Mexico’s wine, and there are well over 100 wineries along the Ruta del Vino (wine route) in Valle de Guadalupe. How is Tequila Made? Just like Champagne and other fine wines, tequila is a drink that takes its name from its region of origin. And like fine wines, the unique characteristics of tequila can be traced back, quite literally, to its roots. ➡️ Nestled in the Highlands of Jalisco is Casa San Matias, the family-owned distillery where owner Carmen Villarreal oversees the team and the creation of all Corazón Tequilas opened their doors to teach me how Tequila is made. Every part of the Tequila making process happens here, from the agave harvest to the bottling of the spirit, keeping true to the storied craft of tequila and allowing for innovations that ensure they minimize the footprint on the land our tequilas call home. ➡️ The appellation, and the environment within it, the terroir, are integral to the quality of Corazón Tequila’s agave, all of which comes from appellations in Jalisco, Mexico, known as the best agave-growing region for tequila. Here, the soil is rich in iron oxide and the extreme temperatures of the warm days and cool nights create a climate where it takes longer for the agave to mature. When I set out to learn about tequila, I asked professionals in the distilling industry who would be the right person to teach me all about the Different varieties of tequila? ➡️ The name Clayton from La Cata came up repeatedly. This was such an amazing experience, and this video is my reference and guide for tequila as Clayton explained everything perfectly for me to grasp and hopefully you will use it in the same manner as well. ➡️ FYI........Some additional information about the episode: When I say “birthplace of the drink that bears its name” - the tradition is born in what is now Amatitán, although at the time (1620-1640) that town was part of the canton of Tequila. ➡️ Due to the Pandemic, I am sad to say that La Cata has closed its doors in Tequila, Mexico. Almost all agave is produced using clones of the mother plant that are genetically identical. The problem with this is……… ➡️ that if the plant is not allowed to evolve and mutate, it could become susceptible to a disease or pest that has the potential to wipe out a huge swath of the supply. That is why some are calling for agave growers to allow the plant to pollinate naturally. With colder winters and hotter summers, microorganisms and bacteria will find it easier to attack the stressed-out agave plants brought about by climate extremes, and dramatically shorten that period of time. ➡️ I sat down with Grover Sanschagrin, owner of TequilaMatchmaker to discuss this and more in the episode. Grover is a former photojournalist turned Internet entrepreneur, discovered tequila relatively late in life but has been making up for it ever since. Grover received formal “catador” training in the evaluation of tequila from Ana Maria Romero Mena, and passed the official test administered by the Consejo Regulador del Tequila, A.C., therefore earning an “Award T” certificate. If you were like me and had questions about it, than this video is for you. ➡️ Good vintage (Dobra berba in Croatian) was established in 2013 by Saša Štula who has always been driven by enthusiasm and desire to offer something new and different to the market. I knew he was the right guy to teach me all about fermentation of wine. ➡️ Besides making quality wines in Croatia, His first breakthrough product was a winter cooked wine presented at Advent in Zagreb where it was recognized as an innovative and high quality product. Through the years this product has become a staple for all winter events all across Croatian cities and even now to surrounding countries. ➡️ In 2017, Šasa has his mind set on another innovative product. A sparkling wine known as Piena. Through the technological and enological guidelines, Charmat method and production from the local varieties of the region proved to be an excellent choice for this new Croatian sparkling wine. The craft beer movement in Mexico is spreading throughout the country and is one of many reasons why you should visit this amazing country. It seems like every day a new brewery is popping up and more consumers are getting educated on what craft beer really is.⁠ ➡️ In April of 2019, 265 breweries from 14 countries entered their finest beers in the second Aro Rojo International Beer Contest held in Tampico on Mexico’s northeastern coast.⁠ This year the prize for Mexico’s best brewery was awarded to Cerveza Fortuna, located on the outskirts of Guadalajara, Jalisco. Two of Fortuna’s beer in a tough competition with 1,200 others ran away with gold medals. ➡️ Their beer is amazing, and their facility and staff is second to none. There motto is passion, knowledge, and respect. A Rare Look Inside Chimay⛪Brewery

I am honored that I was invited to tell the story of Chimay Trappist brewery especially since that seclusion is paramount for the monks of Chimay. So, the abbey, the brewery and the dairy are unfortunately all closed to visitors. However, you will receive a warm welcome and able to taste all of Their products in the adjacent Espace Chimay complex which is down the road from the Abbey. ➡️ The distinctive Chimay brewing process starts with their own well mineral water that is used for brewing and its own home-grown yeast strain. Ever since the brewery was relaunched in 1948, this strain has been used for all its beers. It is used for both the main fermentation, as well as to start up the re-fermentation, just before bottling. All the Chimay beers spend three weeks re-fermenting in the brewery's warm room. This yeast is pretty special, becoming active at a high temperature, and it gives the beer its characteristically herbal and peppery touch. All this yeast-questing took roughly two years of research. ➡️ Chimay is an authentic Trappist ale. That means that it is brewed within the walls of a Trappist monastery under the supervision and responsibility of the monastic community, which is involved in the entire process of making and selling the ale.
